Cinnamon, Dark Chocolate, and Blueberry Flapjack

It’s important to think about snacks, especially when you are living with a non-vegan and haven’t thought about this. So in times when you're peckish, you would be tempted to reach out for something that isn’t vegan. Here’s a super easy flapjack recipe to have in your fridge for snack time!

Preparation Time: 15mins

Baking Time: 25-30mins


  • 200g frozen blueberries

  • 2tbsp cinnamon

  • 100g dark chocolate (broken up)

  • 400g oats

  • 40g chia seeds (these will help bind the flapjack)

  • 100g soft brown sugar

  • 40ml neutral-tasting vegetable oil

  • 50g golden syrup (Place (1/2 cup) of sugar in a medium saucepan and add (1/2 cup) water. Heat and stir till the sugar dissolves to form a syrup)

  • 100g vegan butter


  • In a large pan heat butter, sugar, syrup & oil until fully melted

  • Preheat oven to 180•

  • Once melted, add your oats and combine thoroughly

  • Take the pan off the heat

  • Add the rest of your ingredients and stir through

  • Line ovenproof dish with greaseproof paper and spoon oat mixture evenly

  • Pop into the oven for 25 mins

  • Let it cool and slice into squares

  • Enjoy!

Extra Tips

  • Use coconut oil instead of vegetable oil to make it slightly healthier

  • Pop greaseproof paper over flapjack and roll with a rolling pin (before cooking) to make it nice and flat on top
