Cinnamon, Dark Chocolate, and Blueberry Flapjack

It’s important to think about snacks, especially when you are living with a non-vegan and haven’t thought about this. So in times when you're peckish, you would be tempted to reach out for something that isn’t vegan. Here’s a super easy flapjack recipe to have in your fridge for snack time!
Preparation Time: 15mins
Baking Time: 25-30mins

Ingredients:
200g frozen blueberries
2tbsp cinnamon
100g dark chocolate (broken up)
400g oats
40g chia seeds (these will help bind the flapjack)
100g soft brown sugar
40ml neutral-tasting vegetable oil
50g golden syrup (Place (1/2 cup) of sugar in a medium saucepan and add (1/2 cup) water. Heat and stir till the sugar dissolves to form a syrup)
100g vegan butter
Method:
In a large pan heat butter, sugar, syrup & oil until fully melted
Preheat oven to 180•
Once melted, add your oats and combine thoroughly
Take the pan off the heat
Add the rest of your ingredients and stir through
Line ovenproof dish with greaseproof paper and spoon oat mixture evenly
Pop into the oven for 25 mins
Let it cool and slice into squares

Extra Tips
Use coconut oil instead of vegetable oil to make it slightly healthier
Pop greaseproof paper over flapjack and roll with a rolling pin (before cooking) to make it nice and flat on top
