Enjoy the perfect Vegan Roast Beef Seitan Recipe

Making your own vegan meat has been a huge trend recently and more & more people are making it at home rather than buying pre-made options. Here’s a recipe for ‘Roast Beef’ style Seitan. A perfect meat substitute.


  • 2 cups/240g vital wheat gluten

  • 2 tbsp nutritional yeast

  • 1tsp garlic granules

  • 1tsp thyme

  • 1tsp rosemary

  • 1tsp onion granules

  • 1tsp paprika

  • 50ml Soy Sauce

  • 1tbsp Tomato Puree

  • 1 1/2 cups of water

  • 40ml vegan Worcestershire sauce

  • Salt and pepper to taste


  1. Mix dry ingredients

  2. Add wet ingredients

  3. Mix with a wooden spoon until a ‘dough’ starts to form

  4. Preheat oven to 180 & start boiling a large pan of water

  5. Transfer dough to work surface and knead for around 3 minutes, add more flour if too wet

  6. Once kneaded, form into a long oval shape

  7. Layout tin foil on a work surface and pop your seitan on top

  8. Rub your seitan with some extra olive oil, spices, salt & pepper

  9. Wrap foil snugly around your seitan joint and folding in the sides so no water can seep through

  10. Transfer seitan into a pan of water

  11. Simmer for 8-10 minutes, turning halfway through

  12. Once simmered add to an oven tray and cook for 1 hour

  13. Take seitan out of the oven and let it cool

  14. Rest seitan in the fridge overnight (this is important

  15. When ready to cook again, simply pop it back into the oven but be sure to baste it with some oil/butter and throw some more fresh herbs in too

  16. Carve into slices and serve!

Extra Tips:

  • Letting it rest overnight is optional but will allow the seitan to firm up

  • Add fresh Rosemary and/or Thyme when roasting

  • Serve with roasted vegetables and potatoes or on sandwiches with stuffing.
