Fancy an omelette? Chickpea flour! Yep, you can make an omelette from chickpea flour. Here’s a recipe if you want to try it yourself. Not only is it guilt-free, it's also full of protein!
1/2 cup chickpea flour
2 tbsp Olive Oil
2tbsp nutritional yeast
1/2tsp garlic powder
1/4tsp kala namak (black salt, for eggy taste)
1tbsp soy cream (optional)
200ml almond milk (unsweetened)
Salt and pepper to taste
Mix wet and dry ingredients with a whisk until fully combined
Heat oil in frying pan and turn grill on to a medium heat
Fry up your vegetables (if any) till softened (i like them still slightly crunchy)
Add your ‘egg’ batter evenly throughout the pan
Leave to cook for a minute or 2
Check to see if it started to cook underneath by putting a flat spatula under
If it's cooked underneath, pop the frying pan under the grill to cook the top (this saves a flipping disaster! Be careful the handle of the pan isn’t under as it’ll melt!)
Add some salt & pepper, serve and enjoy!
Add grated cheese before putting under the grill for gooey cheesy goodness!
